采购单 牛里脊肉250克,杏鲍菇2个
调料 青杭椒1个,红尖椒3个,蚝油2大勺,生抽、盐各1勺,黑胡椒粉、食用油各适量
杏鲍菇洗净切丁;青杭椒、红尖椒洗净切小段,放入盘中备用图1。牛里脊肉切丁,需垂直于牛肉纹路下刀,这样切出来的肉丁更有嚼劲图2。注意牛里脊肉在切丁前,要先切去带筋膜的部分,保证牛肉口感嫩滑。

锅中倒入适量食用油,下入腌制好的牛肉粒,迅速翻炒至牛肉表面变色图4,捞出沥油。牛肉粒不要炒太久,否则吃起来会干硬。
